  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, combine the softened cream cheese, mayonnaise, and sour cream. Mix with a spatula or spoon until everything is smooth and well-combined.
  3. Gently fold in the cooked, diced bacon, shredded cheddar cheese, and chopped chives. Add the hot sauce (if using), and a pinch of salt and pepper. Stir until just combined.
  4. Slice your bagels in half. Place them cut-side up on the prepared baking sheet.
  5. Divide the cream cheese mixture evenly among the bagel halves, spreading it from edge to edge.
  6. Place the baking sheet in the preheated oven and bake for 10-12 minutes, or until the topping is hot, bubbly, and slightly golden on top. For a crispier finish, you can switch to the broiler for the last 1-2 minutes, but watch it closely.
  7. Let the bagels cool for a minute or two before serving. They are best enjoyed warm.
