- Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
- In a medium bowl, combine the softened cream cheese, mayonnaise, and sour cream. Mix with a spatula or spoon until everything is smooth and well-combined.
- Gently fold in the cooked, diced bacon, shredded cheddar cheese, and chopped chives. Add the hot sauce (if using), and a pinch of salt and pepper. Stir until just combined.
- Slice your bagels in half. Place them cut-side up on the prepared baking sheet.
- Divide the cream cheese mixture evenly among the bagel halves, spreading it from edge to edge.
- Place the baking sheet in the preheated oven and bake for 10-12 minutes, or until the topping is hot, bubbly, and slightly golden on top. For a crispier finish, you can switch to the broiler for the last 1-2 minutes, but watch it closely.
- Let the bagels cool for a minute or two before serving. They are best enjoyed warm.
