Method
- Preheat the oven to 350°F (175°C). Place the pie crust into a 9-inch pie pan and set aside.
- In a large mixing bowl, combine the mashed sweet potatoes, granulated sugar, brown sugar, and melted butter. Mix until smooth.
- Add eggs, evaporated milk, and vanilla extract. Beat until well combined and creamy.
- Stir in cinnamon, nutmeg, ginger, and salt. Mix until the spices are evenly distributed.
- Pour the filling into the prepared pie crust and smooth the top with a spatula.
- Bake for 55-60 minutes, or until a knife inserted in the center comes out clean. The pie will be slightly puffed and set.
- Allow the pie to cool for at least 30 minutes before slicing and serving. Optional: top with whipped cream.
Notes
For best results, bake the sweet potatoes instead of boiling them to enhance the natural sweetness. This pie can be made a day ahead and stored in the refrigerator.
