  • 1 9-inch Unbaked pie crust Homemade or store-bought
  • 2 cups Mashed sweet potatoes Cooked until tender and mashed smooth
  • 1 cup Granulated sugar
  • 1/2 cup Brown sugar Light or dark, packed
  • 1/2 cup Butter Melted
  • 2 large Eggs Room temperature
  • 1/2 cup Evaporated milk
  • 1 teaspoon Vanilla extract
  • 1/2 teaspoon Ground cinnamon
  • 1/4 teaspoon Ground nutmeg
  • 1/4 teaspoon Ground ginger
  • 1/4 teaspoon Salt

Method
 

  1. Preheat the oven to 350°F (175°C). Place the pie crust into a 9-inch pie pan and set aside.
  2. In a large mixing bowl, combine the mashed sweet potatoes, granulated sugar, brown sugar, and melted butter. Mix until smooth.
  3. Add eggs, evaporated milk, and vanilla extract. Beat until well combined and creamy.
  4. Stir in cinnamon, nutmeg, ginger, and salt. Mix until the spices are evenly distributed.
  5. Pour the filling into the prepared pie crust and smooth the top with a spatula.
  6. Bake for 55-60 minutes, or until a knife inserted in the center comes out clean. The pie will be slightly puffed and set.
  7. Allow the pie to cool for at least 30 minutes before slicing and serving. Optional: top with whipped cream.

Notes

For best results, bake the sweet potatoes instead of boiling them to enhance the natural sweetness. This pie can be made a day ahead and stored in the refrigerator.
