For the Skillet
  • 1 lb ground beef lean preferred
  • 2 medium sweet potatoes peeled and diced into small cubes
  • 1 red bell pepper diced
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 1/2 tsp ground cumin
  • 1/2 tsp chili powder optional for mild heat
  • 1/2 tsp salt or to taste
  • 1/4 tsp black pepper freshly ground
  • 1/4 cup shredded cheddar cheese for topping, optional
  • 2 tbsp fresh parsley chopped, for garnish

Method
 

  1. Heat olive oil in a large skillet over medium heat. Add the ground beef and cook until browned, breaking it up with a spoon as it cooks. Drain excess fat if necessary.
  2. Add the chopped onion, garlic, and bell pepper to the skillet. Sauté for 3–4 minutes until fragrant and slightly softened.
  3. Stir in the diced sweet potatoes, smoked paprika, cumin, chili powder, salt, and pepper. Mix well to coat everything evenly with the spices.
  4. Reduce heat to medium-low and cover the skillet. Cook for 12–15 minutes, stirring occasionally, until the sweet potatoes are tender and cooked through.
  5. Remove the lid and sprinkle the cheddar cheese on top, if using. Cover for another minute to allow the cheese to melt.
  6. Garnish with fresh parsley and serve warm straight from the skillet for a cozy, satisfying meal.

Notes

For extra flavor, try adding a splash of hot sauce or a squeeze of lime before serving. This recipe also works well with ground turkey or chicken for a leaner option.
