- Heat olive oil in a large skillet over medium heat. Add the ground beef and cook until browned, breaking it up with a spoon as it cooks. Drain excess fat if necessary.
- Add the chopped onion, garlic, and bell pepper to the skillet. Sauté for 3–4 minutes until fragrant and slightly softened.
- Stir in the diced sweet potatoes, smoked paprika, cumin, chili powder, salt, and pepper. Mix well to coat everything evenly with the spices.
- Reduce heat to medium-low and cover the skillet. Cook for 12–15 minutes, stirring occasionally, until the sweet potatoes are tender and cooked through.
- Remove the lid and sprinkle the cheddar cheese on top, if using. Cover for another minute to allow the cheese to melt.
- Garnish with fresh parsley and serve warm straight from the skillet for a cozy, satisfying meal.
Notes
