  • 2 1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3/4 cup unsalted butter softened
  • 1 cup granulated sugar
  • 1/4 cup brown sugar packed
  • 1 large egg
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon lemon zest
  • 1/2 cup freeze-dried strawberries crushed into small pieces

Method
 

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, baking powder, and salt. Set aside.
  3. In a large bowl, beat butter, granulated sugar, and brown sugar until light and fluffy.
  4. Add the egg, lemon juice, and lemon zest, mixing until well combined.
  5. Gradually add the dry ingredients into the wet mixture and stir until just combined.
  6. Fold in the crushed freeze-dried strawberries.
  7. Cover and chill the dough for 30 minutes.
  8. Scoop tablespoon-sized portions of dough onto the baking sheet, spacing 2 inches apart.
  9. Bake for 10-12 minutes, until edges are lightly golden.
  10. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

For extra flavor, drizzle cooled cookies with a light lemon glaze made from powdered sugar and lemon juice.
