Ingredients
  

  • 4 boneless skinless chicken breasts about 1.5 lbs pounded to even thickness
  • 3 cloves fresh garlic minced
  • 1 medium onion chopped
  • 1 cup low-sodium chicken broth
  • 10.5 oz can cream of mushroom soup
  • 2 tbsp soy sauce low sodium
  • 2 tsp salt
  • 1 tsp black pepper
  • 1 tsp paprika
  • 1 tsp dried thyme
  • 2 cups cooked long-grain white rice for serving
  • 2 tbsp olive oil for searing

Equipment

Method
 

  1. Preheat oven to 375°F and grease baking dish. Sear chicken breasts in olive oil 5 min per side until golden.
  2. Sauté onion and garlic in same skillet 3 minutes until soft.
  3. Whisk cream of mushroom soup, chicken broth, soy sauce, salt, pepper, paprika, and thyme.
  4. Place chicken in dish, pour sauce over. Cover and bake 30-35 min until 165°F.
  5. Serve over cooked rice.

Notes

  • Rest chicken 5 min post-bake for juiciness.
  • Scale up for crowds.
  • Reheat with broth splash.
