  2. Prepare the Bread: While the sausages cool, trim the crusts from all 12 slices of bread. Using a rolling pin, flatten each slice until it's quite thin. This step is key to getting a tight roll that holds together.
  3. Roll Them Up: Place one cooked sausage link at the edge of a flattened bread slice. Roll the bread up tightly around the sausage, pressing the seam gently to help it seal. Repeat with the remaining sausages and bread slices.
  4. Make the Egg Mixture: In a shallow dish (a pie plate works great for this), whisk together the eggs, milk, vanilla extract, and ground cinnamon until everything is well combined and slightly frothy.
  5. Heat the Skillet: Place a large non-stick skillet over medium heat and melt one tablespoon of butter, letting it coat the bottom of the pan.
  6. Dip and Cook: Working one at a time, dip a sausage roll-up into the egg mixture, turning it to coat all sides. Don't let it soak for too long, or the bread will get soggy. Immediately place it in the hot skillet, seam-side down. This helps seal the roll-up.
