Method
- Preheat oven to 375°F. Grease a 9x13 inch baking dish with butter or cooking spray.
- Pat shrimp completely dry with paper towels. Toss with Old Bay seasoning, minced garlic, and black pepper in a medium bowl.
- In a separate bowl, combine mayonnaise, lemon juice, and half of the shredded cheese. Fold the seasoned shrimp into this mixture until well coated.
- Transfer the shrimp mixture to the prepared baking dish, spreading evenly. Sprinkle remaining cheese over the top.
- Mix panko breadcrumbs with melted butter, then scatter evenly over the cheese layer without packing down.
- Bake for 18-20 minutes until breadcrumbs are golden brown and edges are bubbling. For extra crispiness, broil for 2-3 minutes at the end, watching carefully.
- Let rest for 5 minutes before serving. Garnish with fresh parsley if desired.
Notes
Storage: Refrigerate leftovers in an airtight container for up to 3 days. Reheat covered at 325°F for 15 minutes.
Make-Ahead: Assemble up to 24 hours in advance without breadcrumbs. Add topping just before baking, adding 5 minutes to baking time.
Substitutions: Greek yogurt can replace half the mayo for a lighter version. Use gluten-free breadcrumbs for a gluten-free option.
