  • 2 pounds shrimp, peeled and deveined medium to large size
  • 1 tablespoon Old Bay seasoning
  • 2/3 cup mayonnaise
  • 1 cup shredded cheese cheddar or Gruyère
  • 2 cloves garlic, minced
  • 2 tablespoons fresh lemon juice
Topping
  • 1/2 cup panko breadcrumbs
  • 2 tablespoons melted butter
  • Salt and black pepper to taste

Method
 

  1. Preheat oven to 375°F. Grease a 9x13 inch baking dish with butter or cooking spray.
  2. Pat shrimp completely dry with paper towels. Toss with Old Bay seasoning, minced garlic, and black pepper in a medium bowl.
  3. In a separate bowl, combine mayonnaise, lemon juice, and half of the shredded cheese. Fold the seasoned shrimp into this mixture until well coated.
  4. Transfer the shrimp mixture to the prepared baking dish, spreading evenly. Sprinkle remaining cheese over the top.
  5. Mix panko breadcrumbs with melted butter, then scatter evenly over the cheese layer without packing down.
  6. Bake for 18-20 minutes until breadcrumbs are golden brown and edges are bubbling. For extra crispiness, broil for 2-3 minutes at the end, watching carefully.
  7. Let rest for 5 minutes before serving. Garnish with fresh parsley if desired.

Notes

Storage: Refrigerate leftovers in an airtight container for up to 3 days. Reheat covered at 325°F for 15 minutes.
Make-Ahead: Assemble up to 24 hours in advance without breadcrumbs. Add topping just before baking, adding 5 minutes to baking time.
Substitutions: Greek yogurt can replace half the mayo for a lighter version. Use gluten-free breadcrumbs for a gluten-free option.
