Pumpkin Protein Balls

These no-bake Pumpkin Protein Balls are a quick, healthy, and delicious snack packed with pumpkin spice flavor, oats, and protein. Perfect for meal prep, after-school treats, or a grab-and-go energy boost!

Ingredients
  

Base Ingredients
  • 1 cup rolled oats
  • 1/2 cup pumpkin puree not pumpkin pie filling
  • 1/3 cup protein powder vanilla or unflavored
  • 1/4 cup nut butter such as almond or peanut butter
  • 2 tbsp honey or maple syrup
  • 1 tsp pumpkin pie spice
  • 1 tsp vanilla extract
  • 1/4 cup mini chocolate chips optional

Method
 

  1. In a large mixing bowl, combine oats, pumpkin puree, protein powder, nut butter, honey (or maple syrup), pumpkin pie spice, and vanilla extract. Stir until well mixed.
  2. If the mixture is too sticky, add a little more oats. If too dry, add a small spoonful of pumpkin puree.
  3. Fold in mini chocolate chips, if using.
  4. Scoop out tablespoon-sized portions and roll into balls using your hands.
  5. Place the protein balls on a tray lined with parchment paper and chill in the refrigerator for at least 30 minutes before serving.

Notes

Store pumpkin protein balls in an airtight container in the refrigerator for up to 1 week or freeze for longer storage.
