Ingredients
  

Cake Base
  • 1 box yellow cake mix standard size (15.25 oz)
  • 1/2 cup unsalted butter melted
Filling
  • 1 cup light corn syrup
  • 3 large eggs lightly beaten
  • 1 cup granulated sugar
  • 2 cups pecans chopped
  • 1 tsp vanilla extract
  • 1/4 tsp salt

Method
 

  1. Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking dish.
  2. In a bowl, whisk together corn syrup, eggs, sugar, vanilla extract, and salt until smooth. Stir in chopped pecans.
  3. Pour the pecan mixture evenly into the prepared baking dish.
  4. Sprinkle the dry yellow cake mix evenly over the top of the filling mixture.
  5. Drizzle the melted butter evenly over the cake mix layer, making sure to cover as much as possible.
  6. Bake for 45–50 minutes, or until the top is golden brown and the center is set.
  7. Let cool for at least 15 minutes before slicing and serving.

Notes

For extra richness, serve with a scoop of vanilla ice cream or a dollop of whipped cream. Toasting the pecans before baking can also enhance their flavor.
