Method
- In a large mixing bowl, combine chopped pecans, graham cracker crumbs, and brown sugar.
- Stir in maple syrup and vanilla extract until the mixture holds together like a dough.
- Roll the mixture into small balls, about 1 inch in size, and place them on a parchment-lined baking sheet.
- Chill the balls in the refrigerator for about 30 minutes to firm up.
- Meanwhile, melt the chocolate with coconut oil (if using) until smooth.
- Dip each chilled pecan ball into the melted chocolate, coating evenly. Place back on the baking sheet.
- Allow the chocolate to set completely before serving. Store in the refrigerator until ready to enjoy.
Notes
You can sprinkle a little sea salt on top of the chocolate before it sets for an extra flavor boost. White chocolate also makes a delicious coating variation.
