These No Bake Pecan Pie Balls are a quick and delicious treat made with crushed pecans, graham crackers, and maple syrup, all coated in smooth chocolate. They taste just like classic pecan pie but in bite-sized, no-bake form!

Ingredients
  

For the Pecan Pie Balls
  • 2 cups pecans finely chopped
  • 1 cup graham cracker crumbs
  • 1/2 cup brown sugar packed
  • 1/4 cup maple syrup or corn syrup
  • 1 tsp vanilla extract
For the Coating
  • 12 oz semi-sweet chocolate melted
  • 1 tbsp coconut oil optional, for smoother coating

Method
 

  1. In a large mixing bowl, combine chopped pecans, graham cracker crumbs, and brown sugar.
  2. Stir in maple syrup and vanilla extract until the mixture holds together like a dough.
  3. Roll the mixture into small balls, about 1 inch in size, and place them on a parchment-lined baking sheet.
  4. Chill the balls in the refrigerator for about 30 minutes to firm up.
  5. Meanwhile, melt the chocolate with coconut oil (if using) until smooth.
  6. Dip each chilled pecan ball into the melted chocolate, coating evenly. Place back on the baking sheet.
  7. Allow the chocolate to set completely before serving. Store in the refrigerator until ready to enjoy.

Notes

You can sprinkle a little sea salt on top of the chocolate before it sets for an extra flavor boost. White chocolate also makes a delicious coating variation.
