  • 1/2 cup Unsalted Butter Softened
  • 1/2 cup Granulated Sugar
  • 1/2 cup Brown Sugar Packed
  • 1 Large Egg
  • 1 cup Peanut Butter Creamy or crunchy
  • 1 tsp Vanilla Extract
  • 3/4 cup All-Purpose Flour
  • 1/2 tsp Baking Soda
  • 1/4 tsp Salt
  • 1 1/2 cups Old-Fashioned Oats

Method
 

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the egg, peanut butter, and vanilla extract until well combined.
  4. In a separate bowl, whisk together flour, baking soda, and salt. Gradually add to the wet mixture and mix until incorporated.
  5. Stir in the oats until evenly distributed throughout the dough.
  6. Use a cookie scoop to drop dough balls onto the prepared baking sheet, spacing about 2 inches apart.
  7. Bake for 9–11 minutes, until edges are lightly golden but centers remain soft.
  8. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

For chewier cookies, slightly underbake them and allow them to finish setting on the baking sheet. Store in an airtight container for up to 5 days.
