Method
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the egg, peanut butter, and vanilla extract until well combined.
- In a separate bowl, whisk together flour, baking soda, and salt. Gradually add to the wet mixture and mix until incorporated.
- Stir in the oats until evenly distributed throughout the dough.
- Use a cookie scoop to drop dough balls onto the prepared baking sheet, spacing about 2 inches apart.
- Bake for 9–11 minutes, until edges are lightly golden but centers remain soft.
- Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
For chewier cookies, slightly underbake them and allow them to finish setting on the baking sheet. Store in an airtight container for up to 5 days.
