  • 1/2 cup unsalted butter
  • 2 cups granulated sugar
  • 1/2 cup milk
  • 1/4 cup unsweetened cocoa powder
  • 3 cups quick oats
  • 1 cup creamy peanut butter
  • 1 tsp vanilla extract
  • 1/4 tsp salt optional

Method
 

  1. Line a baking sheet with parchment paper and set aside.
  2. In a medium saucepan, combine butter, sugar, milk, and cocoa powder. Bring to a rolling boil over medium heat, stirring constantly.
  3. Allow the mixture to boil for exactly 1 minute, then remove from heat.
  4. Stir in peanut butter, vanilla extract, and salt until smooth and fully combined.
  5. Add quick oats and stir until evenly coated and thick.
  6. Drop spoonfuls of the mixture onto the prepared baking sheet. Flatten slightly if desired.
  7. Let the cookies cool and set at room temperature for about 30 minutes before serving.

Notes

For chewier cookies, reduce the boiling time by a few seconds. For firmer cookies, let the mixture boil a bit longer. You can also add shredded coconut or chopped nuts for texture.
