Ingredients
  

Cookie Dough Ingredients
  • 1 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 3 cups rolled oats
  • 1 cup raisins Can substitute with chocolate chips

Method
 

  1. Preheat the oven to 175°C (350°F) and line baking sheets with parchment paper.
  2. In a mixing bowl, cream together butter, brown sugar, and granulated sugar until light and fluffy.
  3. Add eggs and vanilla extract, mixing until well combined.
  4. In another bowl, whisk together flour, baking soda, cinnamon, and salt. Gradually add to the wet ingredients.
  5. Stir in oats and raisins until evenly distributed in the dough.
  6. Chill the dough in the refrigerator for at least 30 minutes for best results.
  7. Drop spoonfuls of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  8. Bake for 10–12 minutes or until the edges are golden brown but the centers remain soft.
  9. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

For chewier cookies, slightly underbake and let them finish setting as they cool. You can also add nuts for extra crunch.
