Method
- In a large mixing bowl, combine oats, peanut butter, honey, chocolate chips, and vanilla extract. Stir until well mixed.
- If using chia seeds or flaxseed, stir them in at this stage.
- Cover the bowl and refrigerate for 30 minutes to make the mixture easier to handle.
- Once chilled, scoop out about 1 tablespoon of mixture and roll into a ball. Repeat with the remaining mixture.
- Store energy balls in an airtight container in the refrigerator for up to 1 week.
Notes
These energy balls can be customized with dried fruit, coconut flakes, or protein powder for extra nutrition. If the mixture is too sticky, add more oats; if too dry, add a little more honey or peanut butter.
