- Place white chocolate chips in a heatproof bowl.
- Melt butter in saucepan, stir in heavy cream, simmer 2 minutes.
- Pour hot mixture over chocolate. Let sit 2 minutes, then whisk smooth.
- Stir in strawberry extract, vanilla, and pink food coloring. Microwave if needed.
- Cover and chill 1 hour until firm.
- Scoop and roll into balls with greased hands.
- Roll in powdered sugar, place on tray. Chill 30 more minutes.
