Ingredients
  

  • 2 cups white chocolate chips
  • 1/4 cup unsalted butter
  • 3 tablespoons heavy whipping cream
  • 1 teaspoon strawberry extract
  • 1/2 teaspoon vanilla extract
  • 2-3 drops pink food coloring
  • 1/2 cup powdered sugar for rolling

  • Medium heatproof bowl
  • Small saucepan
  • Cookie scoop
  • Parchment-lined tray

Method
 

  1. Place white chocolate chips in a heatproof bowl.
  2. Melt butter in saucepan, stir in heavy cream, simmer 2 minutes.
  3. Pour hot mixture over chocolate. Let sit 2 minutes, then whisk smooth.
  4. Stir in strawberry extract, vanilla, and pink food coloring. Microwave if needed.
  5. Cover and chill 1 hour until firm.
  6. Scoop and roll into balls with greased hands.
  7. Roll in powdered sugar, place on tray. Chill 30 more minutes.

Notes

  • Chill fully for easy rolling.
  • Use quality chocolate to avoid graininess.
