Ingredients
  

  • 1 lb sirloin steak cut into 1-inch bite-sized cubes
  • 1 lb baby potatoes halved or quartered
  • 4 tablespoons olive oil divided
  • 4 tablespoons unsalted butter divided
  • 5-6 cloves garlic minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried Italian herbs
  • Salt and black pepper to taste
  • Fresh parsley chopped for garnish

Equipment

  • Large skillet
  • Tongs
  • Knife
  • Cutting board

Method
 

  1. Heat 2 tbsp olive oil in large skillet over medium-high. Add potatoes, season with salt, pepper, paprika. Cook 15 mins till golden, tender. Remove.
  2. Pat steak cubes dry. Season with salt, pepper, herbs. Add 1 tbsp oil + 2 tbsp butter to skillet, high heat. Sear batches 2-3 mins/side.
  3. Medium-low heat, add remaining butter + garlic. Sauté 1 min. Return potatoes, toss to coat. Heat 1-2 mins.
  4. Garnish with parsley, serve hot.

Notes

  • Use room-temp steak for best sear.
  • Don't overcrowd pan.
  • Pat dry for crispiness.
