Method
- Heat 2 tbsp olive oil in large skillet over medium-high. Add potatoes, season with salt, pepper, paprika. Cook 15 mins till golden, tender. Remove.
- Pat steak cubes dry. Season with salt, pepper, herbs. Add 1 tbsp oil + 2 tbsp butter to skillet, high heat. Sear batches 2-3 mins/side.
- Medium-low heat, add remaining butter + garlic. Sauté 1 min. Return potatoes, toss to coat. Heat 1-2 mins.
- Garnish with parsley, serve hot.
Notes
- Use room-temp steak for best sear.
- Don't overcrowd pan.
- Pat dry for crispiness.
