- First, get your pasta water going. Bring a large pot of salted water to a rolling boil and cook the bowtie pasta according to the package directions until it’s al dente—firm but with a slight chew. Drain it well and set it aside for later.
- While the pasta is cooking, heat a large skillet or Dutch oven over medium-high heat. Add the ground beef and cook, breaking it apart with a spoon, until it's browned all over and no longer pink. Be sure to drain off any excess grease from the pan.
- Reduce the heat to low and add the butter to the skillet with the cooked beef. Let it melt completely, then stir in the minced garlic. Cook for about a minute, stirring constantly, until the garlic is fragrant. This happens fast, so keep an eye on it to prevent it from burning!
- Pour in the beef broth, onion powder, Italian seasoning, salt, and pepper. Stir everything together, scraping up any browned bits from the bottom of the pan. Let the mixture simmer for 3-4 minutes; this allows the sauce to thicken just slightly and the flavors to meld together beautifully.

Notes
Cook pasta just to al dente, as it will continue cooking in the sauce. For best flavor, get a good brown on the ground beef and drain off excess fat. For the smoothest cheese sauce, use freshly shredded cheese (not pre-shredded) and add it over low heat to prevent a grainy or oily texture.
