Ingredients
  

  • 1 bag coleslaw mix or 8 cups shredded cabbage
  • 1 can black beans 15 oz, drained and rinsed
  • 1 can corn 15 oz, drained
  • 1 jalapeño diced
  • 1 red bell pepper diced
  • 1 bunch green onions sliced
  • 1 bunch fresh cilantro chopped
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 2 tablespoons chipotle peppers in adobo chopped
  • 1/4 cup lime juice fresh
  • 1 packet taco seasoning
  • 2 cups Fritos corn chips plus more for serving
  • salt and pepper to taste

Method
 

  1. In a large mixing bowl, combine the coleslaw mix, black beans, corn, diced jalapeño, red bell pepper, green onions, and fresh cilantro. Toss until evenly distributed.
  2. In a separate bowl, whisk together the mayonnaise, sour cream, chopped chipotle peppers, lime juice, and taco seasoning until smooth and well combined.
  3. Taste the dressing and adjust seasoning with salt and pepper as needed. Add more chipotle for extra heat or more lime juice for brightness.
  4. Pour the dressing over the vegetable mixture and toss gently until everything is evenly coated with the creamy chipotle dressing.
  5. Cover and refrigerate for at least 30 minutes to allow flavors to meld and develop.
  6. Just before serving, add the Fritos corn chips and toss gently to distribute. Serve immediately while chips are still crispy.
  7. Garnish with extra Fritos, fresh cilantro, or sliced green onions if desired. Enjoy your Frito Cowboy Cabbage!

Notes

  • For best results, add Fritos just before serving to maintain crunch
  • Dressing can be made up to 2 days ahead and stored separately
  • Adjust spice level by varying the amount of chipotle peppers
  • Drain vegetables well to prevent watery salad
