Ingredients

Ingredients
  • 3 cups Cooked White Rice
  • 2 cups Shredded Cooked Chicken
  • 1 can Cream of Chicken Soup
  • 1 cup French Onion Soup
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • Salt and Black Pepper to taste
  • 1 cup Sour Cream
  • 1 cup Shredded Mozzarella or Swiss Cheese
  • 1.5 cups French Fried Onions
  • 2 tablespoons Chopped Parsley (optional garnish)

Equipment

  • 9x13 inch baking dish
  • Large bowl

Method

Instructions
  1. Preheat your oven to 375°F (190°C). Lightly grease a 9x13 inch baking dish with butter or non-stick spray.
  2. In a large bowl, combine the cooked rice, shredded chicken, cream of chicken soup, French onion soup, garlic powder, onion powder, salt, pepper, and sour cream. Stir until everything is well combined and creamy.
  3. Pour the mixture into the prepared baking dish and spread it into an even layer.
  4. Sprinkle the shredded mozzarella or Swiss cheese evenly over the top of the mixture.
  5. Bake for 20-25 minutes, until the casserole is heated through and the cheese is melted and bubbly.
  6. Carefully remove the dish from the oven and sprinkle the French fried onions evenly over the melted cheese.
  7. Return the casserole to the oven and bake for another 5-7 minutes, or until the onions are golden brown and fragrant.
  8. Let the casserole rest for a few minutes before serving. Garnish with fresh parsley if desired.

Notes

For the best texture, use cold, day-old rice as it holds its shape better. Using rotisserie chicken can add an extra layer of savory flavor. To prevent the topping from getting soggy, add the French fried onions only during the last 5-7 minutes of baking. This dish is suitable for meal prep; you can assemble the casserole (without the cheese and onion topping) and refrigerate it for up to two days before baking.
