- Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper to prevent the bagels from sticking.
- In a medium-sized mixing bowl, whisk together the all-purpose flour, baking powder, salt, and garlic powder (if you're using it).
- In a separate bowl, mix the cottage cheese and the chopped, well-drained spinach until they are thoroughly combined. It's really important to squeeze as much water out of the spinach as you can.
- Add the wet spinach and cheese mixture to the bowl of dry ingredients. Use a spatula or wooden spoon to mix until a shaggy dough begins to form. Then, use your hands to gently bring it all together into a soft dough ball. Don't overwork it!
- Lightly flour your work surface and your hands. Divide the dough into 6 equal portions. Roll each portion into a ball, then flatten it into a disc about 3-4 inches wide. Use your thumb or the end of a wooden spoon to press a hole into the center of each disc.
- Place the shaped bagels onto your prepared baking sheet. In a small bowl, whisk the egg with a splash of water. Brush this egg wash lightly over the top of each bagel.
- Bake for 15-20 minutes, or until the tops are golden brown and the bagels are cooked through. Let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Notes
Ensure you squeeze as much moisture as possible from the spinach to prevent a soggy dough. Do not overmix the dough to keep the bagels light and tender. For variations, you can add other cheeses like Parmesan or feta, use whole wheat flour, or add toppings like everything bagel seasoning.
