Ingredients
  

  • 2 pounds small potatoes (baby Yukon Gold or red) halved
  • 1/4 cup olive oil
  • 1/2 cup grated Parmesan cheese freshly grated
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried Italian herbs
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt to taste
  • Fresh parsley chopped, for garnish

Method
 

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Wash and dry potatoes thoroughly. Halve into uniform pieces.
  3. In a large bowl, combine olive oil, Parmesan cheese, garlic powder, onion powder, Italian herbs, pepper, and salt.
  4. Add potatoes and toss until evenly coated.
  5. Spread in a single layer on the baking sheet.
  6. Bake for 25-30 minutes, flipping halfway, until golden and crispy.
  7. Garnish with parsley and serve hot.
