Country Apple Fritter Bread

Ingredients
  

For the Bread
  • 1/2 cup unsalted butter softened
  • 3/4 cup granulated sugar
  • 2 large eggs room temperature
  • 2 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 3/4 tsp baking powder
  • 1/2 cup milk
For the Apple Layer
  • 2 cups apples peeled and diced
  • 1/3 cup granulated sugar
  • 1 tsp ground cinnamon
For the Glaze
  • 1/2 cup powdered sugar
  • 1–2 tbsp milk as needed for consistency

Method
 

  1. Preheat the oven to 350°F (175°C). Grease and line a 9x5-inch loaf pan with parchment paper.
  2. In a large bowl, cream together the butter and 3/4 cup sugar until light and fluffy. Beat in eggs and vanilla.
  3. In another bowl, whisk together flour and baking powder. Add dry ingredients to the butter mixture alternately with milk, mixing until just combined.
  4. In a separate bowl, combine diced apples with 1/3 cup sugar and cinnamon.
  5. Pour half the batter into the loaf pan, add half of the apple mixture, then top with remaining batter and the rest of the apples. Lightly swirl with a knife.
  6. Bake for 50 minutes, or until a toothpick inserted in the center comes out clean. Allow to cool for 15 minutes before glazing.
  7. To make the glaze, whisk powdered sugar with milk until smooth. Drizzle over cooled bread before serving.

Notes

For extra flavor, try adding a pinch of nutmeg to the apple mixture. This bread stores well at room temperature for up to 2 days or in the refrigerator for up to a week.
