Method
- Preheat the oven to 350°F (175°C). Grease and line a 9x5-inch loaf pan with parchment paper.
- In a large bowl, cream together the butter and 3/4 cup sugar until light and fluffy. Beat in eggs and vanilla.
- In another bowl, whisk together flour and baking powder. Add dry ingredients to the butter mixture alternately with milk, mixing until just combined.
- In a separate bowl, combine diced apples with 1/3 cup sugar and cinnamon.
- Pour half the batter into the loaf pan, add half of the apple mixture, then top with remaining batter and the rest of the apples. Lightly swirl with a knife.
- Bake for 50 minutes, or until a toothpick inserted in the center comes out clean. Allow to cool for 15 minutes before glazing.
- To make the glaze, whisk powdered sugar with milk until smooth. Drizzle over cooled bread before serving.
Notes
For extra flavor, try adding a pinch of nutmeg to the apple mixture. This bread stores well at room temperature for up to 2 days or in the refrigerator for up to a week.
