  • 1 cup cottage cheese small curd preferred
  • 2 eggs large
  • 1 tbsp honey or maple syrup
  • 1 tsp vanilla extract
  • 1 cup rolled oats blended into oat flour
  • 1 tsp baking powder
  • 1/4 tsp salt

Method
 

  1. Preheat your waffle maker according to the manufacturer’s instructions.
  2. In a blender or mixing bowl, combine cottage cheese, eggs, honey, and vanilla extract. Blend or whisk until smooth.
  3. Add oat flour, baking powder, and salt to the mixture. Stir until fully combined into a smooth batter.
  4. Lightly grease the waffle maker with non-stick spray or butter. Pour in the batter and cook until golden brown and crisp, about 3–5 minutes per waffle.
  5. Carefully remove the waffles and serve warm with your favorite toppings such as fresh fruit, syrup, or nut butter.

Notes

For added flavor, mix in cinnamon or nutmeg to the batter. You can also make the waffles savory by skipping the honey and adding herbs or shredded cheese.
