Ingredients
  

Cloud Bread Base
  • 1 cup cottage cheese full-fat recommended for best texture
  • 3 large eggs separated
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Method
 

  1. Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper.
  2. In a mixing bowl, beat the egg whites with a hand mixer until stiff peaks form. Set aside.
  3. In another bowl, combine the cottage cheese, egg yolks, baking powder, and salt until smooth.
  4. Gently fold the whipped egg whites into the cottage cheese mixture until just combined, being careful not to deflate the batter.
  5. Scoop the mixture into 6 even rounds on the prepared baking sheet.
  6. Bake for 25 minutes or until golden and set. Allow to cool for 10 minutes before serving.

Notes

For a sweeter variation, add a teaspoon of honey or a pinch of cinnamon to the mixture. These cloud breads are best enjoyed fresh but can be stored in an airtight container for up to 2 days.
