Method
- Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper.
- In a mixing bowl, beat the egg whites with a hand mixer until stiff peaks form. Set aside.
- In another bowl, combine the cottage cheese, egg yolks, baking powder, and salt until smooth.
- Gently fold the whipped egg whites into the cottage cheese mixture until just combined, being careful not to deflate the batter.
- Scoop the mixture into 6 even rounds on the prepared baking sheet.
- Bake for 25 minutes or until golden and set. Allow to cool for 10 minutes before serving.
Notes
For a sweeter variation, add a teaspoon of honey or a pinch of cinnamon to the mixture. These cloud breads are best enjoyed fresh but can be stored in an airtight container for up to 2 days.
