Dough Ingredients
  • 2 1/4 tsp active dry yeast 1 packet
  • 1/4 cup warm water about 110°F
  • 1 cup cottage cheese small curd, room temperature
  • 1/4 cup granulated sugar
  • 1/4 cup unsalted butter melted
  • 1 tsp salt
  • 3 1/2 cups all-purpose flour plus more for dusting
Filling Ingredients
  • 1/2 cup unsalted butter softened
  • 1 cup brown sugar packed
  • 2 tbsp ground cinnamon
Glaze Ingredients
  • 1 cup powdered sugar
  • 2 tbsp milk more if needed
  • 1/2 tsp vanilla extract

Method
 

  1. In a small bowl, dissolve yeast in warm water and let it sit for 5–10 minutes until foamy.
  2. In a large mixing bowl, combine cottage cheese, sugar, melted butter, salt, and the yeast mixture. Stir well.
  3. Gradually add flour, one cup at a time, mixing until a soft dough forms. Knead on a floured surface for 5–7 minutes until smooth and elastic.
  4. Place dough in a greased bowl, cover, and let rise for about 1 hour or until doubled in size.
  5. Roll the dough into a large rectangle, about 12x18 inches. Spread softened butter evenly over the dough.
  6. Mix brown sugar and cinnamon, then sprinkle evenly over the buttered dough.
  7. Tightly roll up the dough from the long side and cut into 12 equal pieces. Place rolls in a greased baking dish.
  8. Cover and let rise for another 30 minutes. Preheat oven to 350°F (175°C).
  9. Bake rolls for 20–25 minutes or until golden brown.
  10. Whisk together powdered sugar, milk, and vanilla to make the glaze. Drizzle over warm rolls before serving.

Notes

For a richer flavor, add a handful of chopped pecans or raisins to the cinnamon filling. These rolls taste best served warm with the glaze freshly drizzled.
