Cookie Ingredients
  • 1/2 cup Butter softened
  • 1/2 cup Cottage Cheese well-drained
  • 1/2 cup Granulated Sugar
  • 1/4 cup Brown Sugar packed
  • 1 tsp Vanilla Extract
  • 1 large Egg
  • 1 1/4 cups All-Purpose Flour
  • 1/2 tsp Baking Soda
  • 1/4 tsp Salt
  • 3/4 cup Chocolate Chips semi-sweet

Method
 

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together the butter, cottage cheese, granulated sugar, and brown sugar until smooth.
  3. Add the egg and vanilla extract and mix until fully incorporated.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in the chocolate chips.
  7. Drop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Bake for 12 minutes or until edges are lightly golden. Allow cookies to cool on the baking sheet for 5-10 minutes before transferring to a wire rack.

Notes

For softer cookies, slightly underbake them. You can also substitute cottage cheese with ricotta for a milder flavor.
