Method
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, cream together the butter, cottage cheese, granulated sugar, and brown sugar until smooth.
- Add the egg and vanilla extract and mix until fully incorporated.
- In a separate bowl, whisk together the flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Fold in the chocolate chips.
- Drop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 12 minutes or until edges are lightly golden. Allow cookies to cool on the baking sheet for 5-10 minutes before transferring to a wire rack.
Notes
For softer cookies, slightly underbake them. You can also substitute cottage cheese with ricotta for a milder flavor.
