Method
- In a blender or food processor, blend cottage cheese until smooth and creamy.
- In a mixing bowl, whisk together the blended cottage cheese, egg, sugar, and cocoa powder until well combined.
- Stir in flour, baking powder, and salt. Mix until just combined, then fold in chocolate chips if using.
- Grease a microwave-safe dish and pour in the batter, spreading evenly.
- Microwave on high for 4–5 minutes, or until the center is set and a toothpick inserted comes out mostly clean.
- Allow to cool for 10 minutes before slicing into pieces and serving.
Notes
Microwave wattage may vary, so check the brownies at the 4-minute mark to avoid overcooking. For extra flavor, sprinkle a pinch of espresso powder into the batter.
