Ingredients
  

Brownie Batter
  • 1/2 cup cottage cheese blended until smooth
  • 1/4 cup unsweetened cocoa powder
  • 1/3 cup sugar or sweetener of choice
  • 1 large egg
  • 1/4 cup all-purpose flour or oat flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/4 cup chocolate chips optional, for extra fudginess

Method
 

  1. In a blender or food processor, blend cottage cheese until smooth and creamy.
  2. In a mixing bowl, whisk together the blended cottage cheese, egg, sugar, and cocoa powder until well combined.
  3. Stir in flour, baking powder, and salt. Mix until just combined, then fold in chocolate chips if using.
  4. Grease a microwave-safe dish and pour in the batter, spreading evenly.
  5. Microwave on high for 4–5 minutes, or until the center is set and a toothpick inserted comes out mostly clean.
  6. Allow to cool for 10 minutes before slicing into pieces and serving.

Notes

Microwave wattage may vary, so check the brownies at the 4-minute mark to avoid overcooking. For extra flavor, sprinkle a pinch of espresso powder into the batter.
