Ingredients
  

Dry Ingredients
  • 1/2 cup all-purpose flour spooned and leveled
  • 1/4 cup unsweetened cocoa powder sifted
  • 1/4 tsp salt
  • 1/4 tsp baking powder
Wet Ingredients
  • 1/2 cup unsalted butter melted
  • 1 cup granulated sugar
  • 2 large eggs room temperature
  • 1 tsp vanilla extract
  • 1/2 cup cottage cheese blended until smooth
  • 1/2 cup semi-sweet chocolate chips optional, for extra richness

Method
 

  1. Preheat oven to 350°F (175°C). Grease and line an 8x8 inch baking pan with parchment paper.
  2. In a medium bowl, whisk together flour, cocoa powder, salt, and baking powder. Set aside.
  3. In a large bowl, whisk melted butter and sugar until well combined. Add eggs one at a time, whisking after each addition. Stir in vanilla extract.
  4. Add blended cottage cheese to the wet mixture and whisk until smooth.
  5. Gradually fold in the dry ingredients until just combined. Do not overmix. Stir in chocolate chips if using.
  6. Pour batter into prepared baking pan and spread evenly.
  7. Bake for 28–32 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
  8. Allow brownies to cool in the pan for at least 20 minutes before slicing and serving.

Notes

For an even fudgier texture, slightly underbake the brownies. You can also swirl a few spoonfuls of peanut butter or Nutella into the batter before baking for extra flavor.
