Ingredients
  

Base Ingredients
  • 2 cups cottage cheese small curd preferred
  • 1 package instant vanilla pudding mix 3.4 oz size
  • 1 1/2 cups milk cold
  • 4 ripe bananas sliced
  • 1 box vanilla wafers
  • 1 cup whipped topping such as Cool Whip
Optional Garnish
  • 2 tbsp crushed vanilla wafers for topping
  • 1 tbsp banana slices for garnish

Method
 

  1. In a blender or food processor, blend cottage cheese until smooth and creamy.
  2. In a mixing bowl, whisk together the pudding mix and cold milk until thickened, about 2 minutes.
  3. Fold the blended cottage cheese into the pudding mixture until well combined.
  4. In a serving dish, layer vanilla wafers, banana slices, and the pudding mixture. Repeat until all ingredients are used, finishing with the pudding layer.
  5. Spread whipped topping evenly over the final layer.
  6. Refrigerate for at least 1 hour before serving to allow the flavors to meld.
  7. Garnish with crushed wafers and banana slices just before serving.

Notes

For best results, assemble the pudding a few hours in advance to let the cookies soften into a cake-like texture. Use very ripe bananas for natural sweetness.
