Ingredients
  

Dry Ingredients
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
Wet Ingredients
  • 3 medium ripe bananas mashed
  • 1 cup cottage cheese blended until smooth
  • 2 large eggs
  • 1/2 cup brown sugar packed
  • 1/4 cup melted butter
  • 1 tsp vanilla extract

Method
 

  1. Preheat your oven to 350°F (175°C). Grease or line a loaf pan with parchment paper.
  2. In a mixing bowl, whisk together flour, baking soda, and salt. Set aside.
  3. In another large bowl, mash the ripe bananas. Add blended cottage cheese, eggs, brown sugar, melted butter, and vanilla extract. Mix until smooth.
  4. Gradually fold the dry ingredients into the wet mixture until just combined. Do not overmix.
  5. Pour the batter into the prepared loaf pan and smooth the top.
  6. Bake for 50–55 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let the bread cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

For added texture, stir in 1/2 cup of chopped walnuts or chocolate chips before baking. Store leftovers in an airtight container for up to 4 days.
