These Cinnamon Roll Muffins are a quick and easy twist on classic cinnamon rolls, baked into soft, fluffy muffins with a gooey cinnamon-sugar swirl and a sweet glaze drizzle.

Ingredients
  

Muffin Batter
  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 3/4 cup milk
  • 1/3 cup unsalted butter, melted
  • 1 large egg
Cinnamon Swirl
  • 1/2 cup brown sugar packed
  • 1 1/2 tsp ground cinnamon
  • 3 tbsp unsalted butter, melted
Glaze
  • 1/2 cup powdered sugar
  • 1–2 tbsp milk as needed for drizzling
  • 1/2 tsp vanilla extract

Method
 

  1. Preheat the oven to 350°F (175°C). Grease or line a 12-cup muffin tin.
  2. In a mixing bowl, whisk together the flour, sugar, baking powder, and salt.
  3. In another bowl, combine the milk, melted butter, and egg. Pour the wet ingredients into the dry ingredients and stir until just combined.
  4. In a small bowl, mix together brown sugar, cinnamon, and melted butter to make the swirl filling.
  5. Spoon a little batter into each muffin cup, add a teaspoon of cinnamon swirl, then top with more batter. Use a toothpick to gently swirl the cinnamon mixture through the batter.
  6. Bake for 18–20 minutes, or until a toothpick inserted in the center comes out clean. Let muffins cool for 10 minutes.
  7. Whisk together powdered sugar, milk, and vanilla extract for the glaze. Drizzle over cooled muffins before serving.

Notes

For extra flavor, add a pinch of nutmeg to the cinnamon swirl. These muffins are best served warm, but they also store well in an airtight container for up to 3 days.
