Method
- Preheat the oven to 350°F (175°C). Grease or line a 12-cup muffin tin.
- In a mixing bowl, whisk together the flour, sugar, baking powder, and salt.
- In another bowl, combine the milk, melted butter, and egg. Pour the wet ingredients into the dry ingredients and stir until just combined.
- In a small bowl, mix together brown sugar, cinnamon, and melted butter to make the swirl filling.
- Spoon a little batter into each muffin cup, add a teaspoon of cinnamon swirl, then top with more batter. Use a toothpick to gently swirl the cinnamon mixture through the batter.
- Bake for 18–20 minutes, or until a toothpick inserted in the center comes out clean. Let muffins cool for 10 minutes.
- Whisk together powdered sugar, milk, and vanilla extract for the glaze. Drizzle over cooled muffins before serving.
Notes
For extra flavor, add a pinch of nutmeg to the cinnamon swirl. These muffins are best served warm, but they also store well in an airtight container for up to 3 days.
