Method
- In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
- In a large bowl, cream butter and sugar until light and fluffy. Beat in eggs and vanilla until combined.
- Gradually add the dry ingredients to the wet mixture until a soft dough forms. Divide dough in half, wrap in plastic wrap, and chill for 1 hour.
- On a floured surface, roll out each dough half into a rectangle. Brush with melted butter, then sprinkle with brown sugar and cinnamon.
- Tightly roll the dough into a log. Wrap in plastic wrap and chill for at least 1 hour for easier slicing.
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper. Slice dough into 1/4-inch rounds and place on prepared sheets.
- Bake for 10–12 minutes or until edges are lightly golden. Cool on wire racks.
- Whisk together glaze ingredients until smooth. Drizzle over cooled cookies before serving.
Notes
For extra flavor, add a pinch of nutmeg to the filling. Cookies can be stored in an airtight container for up to 5 days or frozen for up to 2 months.
