Ingredients
  

Dough Ingredients
  • 2 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3/4 cup unsalted butter softened
  • 1 cup granulated sugar
  • 2 large eggs room temperature
  • 2 teaspoons vanilla extract
Filling
  • 1/4 cup unsalted butter melted
  • 1/2 cup brown sugar packed
  • 1 1/2 tablespoons ground cinnamon
Glaze
  • 1 cup powdered sugar sifted
  • 2–3 tablespoons milk adjust as needed
  • 1/2 teaspoon vanilla extract

Method
 

  1. In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
  2. In a large bowl, cream butter and sugar until light and fluffy. Beat in eggs and vanilla until combined.
  3. Gradually add the dry ingredients to the wet mixture until a soft dough forms. Divide dough in half, wrap in plastic wrap, and chill for 1 hour.
  4. On a floured surface, roll out each dough half into a rectangle. Brush with melted butter, then sprinkle with brown sugar and cinnamon.
  5. Tightly roll the dough into a log. Wrap in plastic wrap and chill for at least 1 hour for easier slicing.
  6. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper. Slice dough into 1/4-inch rounds and place on prepared sheets.
  7. Bake for 10–12 minutes or until edges are lightly golden. Cool on wire racks.
  8. Whisk together glaze ingredients until smooth. Drizzle over cooled cookies before serving.

Notes

For extra flavor, add a pinch of nutmeg to the filling. Cookies can be stored in an airtight container for up to 5 days or frozen for up to 2 months.
