Method
- Preheat the oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan.
- In a medium bowl, whisk together flour, baking soda, baking powder, and salt. Set aside.
- In a large mixing bowl, beat eggs, oil, granulated sugar, brown sugar, and vanilla extract until smooth and well combined.
- Stir the grated zucchini into the wet mixture until evenly distributed.
- Gradually add the dry ingredients into the wet mixture, mixing until just combined. Do not overmix.
- Fold in the chocolate chips.
- Pour the batter into the prepared loaf pan and smooth the top with a spatula.
- Bake for 50–55 minutes, or until a toothpick inserted into the center comes out clean (a few melted chocolate spots are fine).
- Remove from oven and allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Notes
For extra flavor, add 1 teaspoon of ground cinnamon or a pinch of nutmeg to the dry ingredients. This bread also freezes well for up to 2 months.
