Ingredients
  

Dry Ingredients
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
Wet Ingredients
  • 2 large eggs room temperature
  • 1/2 cup vegetable oil
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar packed
  • 2 tsp vanilla extract
  • 1 1/2 cups grated zucchini excess water squeezed out
  • 1 cup semi-sweet chocolate chips

Method
 

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan.
  2. In a medium bowl, whisk together flour, baking soda, baking powder, and salt. Set aside.
  3. In a large mixing bowl, beat eggs, oil, granulated sugar, brown sugar, and vanilla extract until smooth and well combined.
  4. Stir the grated zucchini into the wet mixture until evenly distributed.
  5. Gradually add the dry ingredients into the wet mixture, mixing until just combined. Do not overmix.
  6. Fold in the chocolate chips.
  7. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  8. Bake for 50–55 minutes, or until a toothpick inserted into the center comes out clean (a few melted chocolate spots are fine).
  9. Remove from oven and allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

For extra flavor, add 1 teaspoon of ground cinnamon or a pinch of nutmeg to the dry ingredients. This bread also freezes well for up to 2 months.
