Ingredients
  

Chicken and wrap
  • 1.5 lb boneless skinless chicken breasts cooked and sliced
  • 4 large flour tortillas burrito-size
Caesar filling
  • 1 large head romaine lettuce washed, dried, and chopped
  • 1/2 cup Caesar dressing more to taste
  • 1 cup croutons lightly crushed
  • 1/2 cup Parmesan cheese shredded or grated
  • 1 tbsp olive oil for cooking if needed
  • salt and black pepper to taste

Method
 

  1. Season the chicken with salt and pepper, then cook in a lightly oiled skillet over medium heat until golden on the outside and cooked through in the center. Let rest for a few minutes and slice into strips or bite-sized pieces.
  2. Rinse the romaine, dry it very well, and chop it into small pieces. Add it to a large mixing bowl.
  3. Add the Caesar dressing, crushed croutons, and Parmesan to the bowl with the lettuce. Toss gently until everything is lightly coated, adding more dressing if needed.
  4. Warm the tortillas in a dry skillet or microwave just until soft and pliable.
  5. Place a warm tortilla on a flat surface. Arrange a portion of sliced chicken down the center, then spoon some of the dressed Caesar salad over the chicken.
  6. Fold the sides of the tortilla in toward the center, then roll it up tightly from the bottom to form a wrap. Repeat with the remaining tortillas and filling.
  7. Slice each wrap in half if desired and serve right away while the lettuce is crisp and the tortilla is soft.

Notes

For extra flavor, squeeze a little lemon over the filling before rolling, or add a pinch of crushed red pepper for gentle heat. Assemble just before serving to keep the lettuce crisp and the wraps from getting soggy.
