Method
- Season the chicken with salt and pepper, then cook in a lightly oiled skillet over medium heat until golden on the outside and cooked through in the center. Let rest for a few minutes and slice into strips or bite-sized pieces.
- Rinse the romaine, dry it very well, and chop it into small pieces. Add it to a large mixing bowl.
- Add the Caesar dressing, crushed croutons, and Parmesan to the bowl with the lettuce. Toss gently until everything is lightly coated, adding more dressing if needed.
- Warm the tortillas in a dry skillet or microwave just until soft and pliable.
- Place a warm tortilla on a flat surface. Arrange a portion of sliced chicken down the center, then spoon some of the dressed Caesar salad over the chicken.
- Fold the sides of the tortilla in toward the center, then roll it up tightly from the bottom to form a wrap. Repeat with the remaining tortillas and filling.
- Slice each wrap in half if desired and serve right away while the lettuce is crisp and the tortilla is soft.
Notes
For extra flavor, squeeze a little lemon over the filling before rolling, or add a pinch of crushed red pepper for gentle heat. Assemble just before serving to keep the lettuce crisp and the wraps from getting soggy.
