Ingredients
  

Dry Ingredients
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
Wet Ingredients
  • 1 cup unsalted butter softened
  • 3/4 cup brown sugar packed
  • 1/2 cup granulated sugar
  • 2 large eggs room temperature
  • 2 tsp vanilla extract
Mix-ins
  • 2 1/2 cups old-fashioned oats
  • 1 1/2 cups semi-sweet chocolate chips

Method
 

  1. In a medium bowl, whisk together flour, baking soda, and salt. Set aside.
  2. In a large bowl, beat butter, brown sugar, and granulated sugar until light and fluffy using a hand or stand mixer.
  3. Add eggs one at a time, beating well after each addition. Mix in vanilla extract.
  4. Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
  5. Stir in oats and chocolate chips until evenly distributed.
  6. Cover and chill the dough for 30 minutes for best texture.
  7. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  8. Drop tablespoonfuls of dough onto prepared sheets, spacing 2 inches apart.
  9. Bake for 10–12 minutes, until edges are golden and centers are slightly soft.
  10. Allow cookies to cool on baking sheets for 5 minutes before transferring to a wire rack.

Notes

For chewier cookies, slightly underbake them and let them rest on the baking sheet. Add chopped nuts or white chocolate chips for extra flavor.
