Ingredients
  

For the Beef
  • 1 lb ground beef lean
  • 1/2 tsp salt to taste
  • 1/4 tsp black pepper freshly ground
For the Dip
  • 1 can Rotel diced tomatoes and green chilies 10 oz can, drained
  • 8 oz cream cheese softened
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • 1 tsp garlic powder
  • 1/2 tsp onion powder

Method
 

  1. In a skillet over medium heat, cook the ground beef with salt and pepper until browned and fully cooked. Drain excess fat and set aside.
  2. In a mixing bowl, combine softened cream cheese, shredded cheddar, shredded Monterey Jack, garlic powder, and onion powder. Stir until smooth and creamy.
  3. Fold in the cooked ground beef and drained Rotel tomatoes until evenly mixed.
  4. Transfer the mixture back to the skillet or a baking dish and heat over low until the cheese is melted and the dip is warm. Stir occasionally.
  5. Serve immediately with tortilla chips, crackers, or fresh vegetables.

Notes

For a spicier dip, leave some of the Rotel liquid in or add diced jalapeƱos. You can also make this in a slow cooker for easy party prep.
