Ingredients

Base Ingredients
  • 2 cups cooked chicken shredded or cubed
  • 3 cups cooked rice white or jasmine
  • 2 cups broccoli florets steamed
Sauce Ingredients
  • 1 can cream of chicken soup 10.5 oz
  • 1 cup milk
  • 1 1/2 cups cheddar cheese shredded, divided
  • 1/2 tsp garlic powder
  • 1/2 tsp salt or to taste
  • 1/4 tsp black pepper

Method

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9x13 baking dish and set aside.
  2. In a large bowl, combine cooked chicken, cooked rice, and steamed broccoli. Mix until evenly distributed.
  3. In a separate bowl, whisk together cream of chicken soup, milk, 1 cup of shredded cheddar cheese, garlic powder, salt, and pepper until smooth.
  4. Pour the sauce mixture over the chicken, rice, and broccoli. Stir until everything is well coated.
  5. Transfer the mixture to the prepared baking dish and spread it evenly.
  6. Top with the remaining 1/2 cup of shredded cheddar cheese.
  7. Bake for 30–35 minutes, or until the casserole is hot and bubbly and the cheese is melted.
  8. Remove from the oven, let cool for 5 minutes, then serve warm.

Notes

For extra richness, add a splash of heavy cream to the sauce mixture. You can also substitute cauliflower for broccoli or use Monterey Jack cheese for a milder flavor.
