Ingredients
  

Dry Ingredients
  • 1 1/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp salt
Wet Ingredients
  • 1/2 cup unsalted butter softened
  • 1/2 cup brown sugar packed
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
Mix-ins
  • 1 cup rolled oats old-fashioned
  • 1 cup carrots grated
  • 1/2 cup raisins
  • 1/2 cup chopped walnuts optional

Method
 

  1. In a medium bowl, whisk together flour, baking soda, cinnamon, nutmeg, and salt. Set aside.
  2. In a large mixing bowl, beat the butter, brown sugar, and granulated sugar together until light and fluffy.
  3. Add the egg and vanilla extract, mixing until well combined.
  4. Gradually add the dry ingredients into the wet mixture and mix just until combined.
  5. Stir in the oats, grated carrots, raisins, and walnuts (if using).
  6. Cover the dough and chill in the refrigerator for 30 minutes.
  7. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  8. Scoop tablespoon-sized portions of dough onto the baking sheets, spacing them about 2 inches apart.
  9. Bake for 10–12 minutes, or until the edges are golden brown. Allow cookies to cool on the sheet for 5 minutes before transferring to a wire rack.

Notes

For a bakery-style finish, drizzle cooled cookies with cream cheese glaze. Store cookies in an airtight container at room temperature for up to 4 days.
