Method
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a large mixing bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy.
- Add the eggs one at a time, beating well after each addition. Stir in vanilla extract.
- In another bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
- Gradually add dry ingredients to the wet mixture. Stir in grated carrots, oats, raisins, and walnuts until combined.
- Drop dough by rounded tablespoons onto prepared baking sheets, spacing about 2 inches apart.
- Bake for 10–12 minutes or until edges are golden. Allow cookies to cool on a wire rack.
- Meanwhile, prepare the frosting: Beat cream cheese and butter until smooth. Gradually add powdered sugar and vanilla, mixing until creamy.
- Once cookies are cooled completely, spread or pipe frosting on top. Serve immediately or store in an airtight container.
Notes
For best results, chill the dough for 30 minutes before baking to help the cookies hold their shape. Add toasted coconut for extra texture and flavor if desired.
