Method
- Preheat the oven to 350°F (175°C). Grease and line a 9x5-inch loaf pan with parchment paper.
- In a large mixing bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
- In another bowl, mash the bananas until smooth. Whisk in eggs, oil, brown sugar, and vanilla until well combined.
- Gradually add the dry ingredients into the wet mixture, stirring until just combined. Do not overmix.
- Fold in grated carrots, walnuts, and raisins.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 50–55 minutes, or until a toothpick inserted in the center comes out clean.
- Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Notes
For extra indulgence, top the cooled bread with cream cheese frosting. Store leftovers in an airtight container at room temperature for up to 3 days or refrigerate for longer freshness.
