Ingredients
  

Dry Ingredients
  • 2 cups old-fashioned rolled oats
  • 2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 tsp baking powder
  • 1/4 tsp salt
Wet Ingredients
  • 2 cups milk dairy or non-dairy
  • 1/4 cup maple syrup or honey
  • 2 large eggs lightly beaten
  • 1 tsp vanilla extract
Add-ins
  • 1 cup carrots grated
  • 1/2 cup crushed pineapple drained
  • 1/3 cup raisins or chopped dates
  • 1/3 cup chopped walnuts optional

Method
 

  1. Preheat the oven to 350°F (175°C). Lightly grease a 9x9-inch baking dish.
  2. In a large bowl, mix together oats, cinnamon, nutmeg, baking powder, and salt.
  3. In another bowl, whisk together milk, maple syrup, eggs, and vanilla extract until smooth.
  4. Pour the wet mixture into the dry ingredients and stir until well combined.
  5. Fold in grated carrots, pineapple, raisins, and walnuts.
  6. Transfer the mixture into the prepared baking dish and spread evenly.
  7. Bake for 35 minutes, or until the top is golden and the center is set.
  8. Allow to cool for at least 10 minutes before slicing into squares and serving.

Notes

Top with a dollop of Greek yogurt or a drizzle of cream cheese glaze for a true carrot cake feel. This baked oatmeal can be stored in the fridge for up to 5 days or frozen for up to 2 months.
