Ingredients
  

  • 2 pounds flank steak or skirt steak thinly sliced against the grain
  • 2 tablespoons vegetable oil for cooking
  • 1 large white onion divided
  • 3 fresh limes divided
  • 1 bunch fresh cilantro chopped
  • 1 teaspoon salt plus more to taste
  • 1 teaspoon freshly ground black pepper
  • 2 tablespoons unsalted butter
  • 16 small corn tortillas

  • Sharp knife

Method
 

  1. Slice the flank steak into thin strips, then cut into small bite-sized pieces.
  2. Heat vegetable oil in a large skillet over medium-high heat until hot.
  3. Add the sliced beef to the skillet and sear without crowding the pan. Cook until browned, about 5 minutes.
  4. Add half the chopped onion and cook until softened, about 3-4 minutes more.
  5. Season with salt and pepper, then squeeze the juice from 2 limes over the meat mixture.
  6. In a separate skillet, melt butter and lightly fry each corn tortilla for 30 seconds per side.
  7. Assemble tacos using 2 tortillas per taco. Fill with meat mixture and top with remaining onion, cilantro, and lime wedges.
