Ingredients
  

Crust
  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter melted
Cheesecake Filling
  • 16 oz cream cheese softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
Apple Layer
  • 2 cups apples peeled and finely chopped
  • 2 tbsp granulated sugar
  • 1 tsp ground cinnamon
Topping
  • 1/2 cup caramel sauce for drizzling

Method
 

  1. Preheat the oven to 350°F (175°C). Line a 9x13-inch baking pan with parchment paper.
  2. In a bowl, mix graham cracker crumbs with melted butter. Press firmly into the bottom of the prepared pan to form the crust.
  3. In a large mixing bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, then mix in vanilla extract. Spread evenly over the crust.
  4. In another bowl, toss chopped apples with sugar and cinnamon. Evenly spread the apple mixture over the cheesecake layer.
  5. Bake for 40–45 minutes, or until the center is set. Remove from oven and allow to cool completely.
  6. Refrigerate for at least 2 hours or until firm. Before serving, drizzle with caramel sauce and slice into bars.

Notes

For extra flavor, try using tart apples like Granny Smith. You can also add a sprinkle of chopped pecans over the apple layer before baking for a crunchy twist.
