Method
- Prepare strawberries: Wash, dry thoroughly, and skewer from the top.
- In a saucepan, combine 2 cups sugar and 1/2 cup water. Heat over medium, stirring until dissolved.
- Stop stirring. Boil to 300-305°F (hard crack stage).
- Dip skewered strawberries in hot syrup. Let excess drip off.
- Place on parchment-lined sheet. Let harden 5-10 minutes.
Notes
Use a thermometer for best results. Eat within 4 hours.
- Dry berries completely to avoid sticking.
- Work quickly after removing from heat.
- Store uncovered at room temp.
