Ingredients
  

Base Ingredients
  • 1 1/2 cups cottage cheese full-fat or low-fat
  • 3 large eggs room temperature
  • 1/4 cup milk any kind
  • 1/3 cup honey or maple syrup
  • 1 tsp vanilla extract
Dry Ingredients
  • 1 cup rolled oats old-fashioned
  • 1 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
Fruits & Toppings
  • 1 1/2 cups blueberries fresh or frozen
  • 2 tbsp sliced almonds optional, for topping

Method
 

  1. Preheat oven to 350°F (175°C). Grease an 8x8 inch baking dish with butter or nonstick spray.
  2. In a large mixing bowl, whisk together cottage cheese, eggs, milk, honey, and vanilla extract until smooth and combined.
  3. In a separate bowl, stir together oats, baking powder, cinnamon, and salt.
  4. Gradually fold the dry ingredients into the wet mixture until just combined.
  5. Gently fold in the blueberries, reserving a few to sprinkle on top.
  6. Pour the batter into the prepared baking dish. Top with reserved blueberries and sliced almonds if using.
  7. Bake for 35–40 minutes or until golden brown on top and set in the center.
  8. Let cool for 10 minutes before slicing into squares and serving warm.

Notes

For extra sweetness, drizzle maple syrup or honey before serving. Store leftovers in the refrigerator for up to 4 days and reheat in the oven or microwave.
