- Prep Your Oven and Pastry: First things first, get your oven preheating to 400°F (200°C). A hot oven is essential for making the puff pastry rise and become flaky. Line a baking sheet with parchment paper to prevent sticking and make cleanup a breeze. Gently unroll your thawed puff pastry sheet on a lightly floured surface to smooth out any creases.
- Add the Filling: Spread the mixed berry preserves evenly over the surface of the pastry, making sure to leave about a 1-inch border on all sides. This little bit of space prevents the filling from oozing out and burning during baking. In a small bowl, mix the melted butter and vanilla extract, then brush this mixture lightly over the preserves.
- Cut and Twist: Using a sharp knife or a pizza cutter, slice the pastry into 8 even strips. Now for the fun part! Carefully pick up one strip at a time and twist it several times to create a spiral shape. Don't twist too tightly, or the pastry might tear. Place each twist onto your prepared baking sheet, leaving some space between them.
- The Finishing Touches: Brush each of the berry twists with the beaten egg wash. This is what gives them their gorgeous, glossy, golden-brown color. After the egg wash, sprinkle each twist generously with the granulated sugar. This adds a lovely sweetness and a delightful crunch.
- Bake to Perfection: Place the baking sheet in the preheated oven and bake for 20-25 minutes. You'll know they're done when they are beautifully puffed up and a deep golden brown. The sugar on top should be slightly caramelized. Let them cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool a bit more. They are delicious served warm!
Notes
Keep the puff pastry cold to ensure it puffs correctly; if it gets soft, return it to the fridge. Don't overfill the twists to prevent the filling from oozing out. For variations, try different fillings like apricot preserves or Nutella, add spices like cinnamon, or make them savory with pesto and parmesan. The twists are best served warm but can be stored in an airtight container for up to two days.
