  • 1 12-ounce package cheese-filled tortellini
  • 2 cups shredded, low-moisture mozzarella cheese
  • 1/2 cup grated Parmesan cheese

  1. Preheat your oven to 375°F (190°C). Lightly spray a 9x13-inch baking dish with nonstick cooking spray.
  2. In a large skillet or Dutch oven, heat the olive oil over medium heat. Add the chopped onion and cook for 5-7 minutes until softened. Add the minced garlic and cook for another minute until fragrant.
  3. Add the ground beef to the skillet, break it up with a spoon, and cook until completely browned. Drain off any excess grease.
  4. Stir in the marinara sauce and Italian seasoning. Bring the mixture to a simmer and let it cook for about 5 minutes for the flavors to meld.
  5. While the sauce simmers, cook the tortellini according to package directions until just al dente. Drain it well.
  6. Add the drained tortellini to the skillet with the meat sauce and stir gently to coat everything evenly.
  7. Pour the mixture into the prepared baking dish and spread it in an even layer. Sprinkle the shredded mozzarella and grated Parmesan cheese over the top. Bake for 25-30 minutes, until the cheese is melted, bubbly, and golden brown. Let it rest for a few minutes before serving.

Notes

For the best cheese pull, shred your own mozzarella. Be careful not to overcook the tortellini before baking, as it will continue to cook in the oven. Let the casserole rest for 5-10 minutes before serving to allow it to set. You can substitute ground beef with Italian sausage or ground turkey, add veggies like spinach or mushrooms, or stir in cream cheese for a creamier sauce.
