Banana Cottage Cheese Pancakes

Ingredients
  

Pancake Batter
  • 2 pieces ripe bananas mashed
  • 1 cup cottage cheese small curd works best
  • 2 pieces large eggs
  • 1/2 cup rolled oats or quick oats
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1/4 tsp cinnamon optional
  • 1 tbsp butter or oil for cooking

Method
 

  1. In a mixing bowl, mash the ripe bananas until smooth.
  2. Add the cottage cheese, eggs, oats, vanilla extract, baking powder, and cinnamon. Whisk or blend until combined and slightly smooth.
  3. Heat a nonstick skillet over medium heat and lightly grease with butter or oil.
  4. Pour about 1/4 cup of batter onto the skillet for each pancake. Cook for 2–3 minutes until bubbles form on top, then flip and cook for another 2 minutes until golden brown.
  5. Repeat with remaining batter. Serve warm with fresh fruit, honey, or maple syrup.

Notes

For extra fluffiness, blend the batter in a blender instead of whisking. You can also add chocolate chips, blueberries, or nuts for variety.
