Ingredients
  

Brownie Batter
  • 2 medium ripe avocados mashed until smooth
  • 1/2 cup cocoa powder unsweetened
  • 1/2 cup all-purpose flour or almond flour for gluten-free
  • 1/2 cup maple syrup or honey
  • 1/4 cup coconut oil melted
  • 2 eggs room temperature
  • 1 tsp vanilla extract
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup dark chocolate chips optional

Method
 

  1. Preheat the oven to 350°F (175°C). Grease and line an 8x8-inch baking pan with parchment paper.
  2. In a large mixing bowl, mash the ripe avocados until completely smooth.
  3. Add the cocoa powder, flour, maple syrup, coconut oil, eggs, vanilla extract, baking soda, and salt. Mix until just combined.
  4. Fold in the dark chocolate chips if using.
  5. Pour the batter into the prepared baking pan and spread evenly.
  6. Bake for 25 minutes, or until a toothpick inserted in the center comes out mostly clean with a few fudgy crumbs.
  7. Allow the brownies to cool in the pan for at least 30 minutes before slicing.

Notes

For extra fudgy brownies, slightly underbake them and let them set while cooling. Store in an airtight container for up to 4 days or refrigerate for longer freshness.
