Method
- Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
- In a medium bowl, whisk together flour, baking powder, cinnamon, and salt.
- In a large mixing bowl, cream butter and sugar until light and fluffy. Beat in eggs one at a time, then add vanilla extract.
- Gradually add dry ingredients to wet ingredients, alternating with milk. Mix until just combined.
- Divide the batter evenly into cupcake liners and bake for 20–25 minutes, or until a toothpick inserted comes out clean. Let cool.
- For the filling, cook apples, brown sugar, cinnamon, and butter in a pan over medium heat until soft and caramelized. Let cool.
- Core the center of each cooled cupcake and fill with apple mixture.
- Top with whipped cream or frosting and sprinkle with cinnamon before serving.
Notes
For extra flavor, drizzle caramel sauce on top of the cupcakes before serving. These cupcakes are best enjoyed the same day but can be stored in the fridge for up to 2 days.
